hi henry, the physic behind this trick is pretty simple: as the flame of the matches burns, the air inside the glass is being eliminated by the combustion itself, so the vacuum inside is filled by the water pushed (or pulled) by the external pressure.
The citrus wedge is just for the purpose of avoid the matches getting wet while water is raising inside the glass.

According to the conservation of mass the oxygen in the glass is not being eliminated.

You are right it is not being eliminated. It is being converted to a different form of matter via various chemical processes. Regardless the effect is the same, the pressure differential causes the liquid to move into the evacuated area.

You were right , now you’re wrong. The oxygen was eliminated from the fire consuming it, causing a vacuum which pulled the liquid into the glass.

Oxygen isn’t eliminated, like Alu said. The law of conservation states that nothing can be created nor destroyed. Ean is right, it is converted into something that causes a pressure differential.
